Healthy pie recipe in peanut butter cup

This healthy peanut butter cup cake is delicious and can be prepared in 3 minutes. No refined sugar, gluten free and safe for vegans
I know cup cakes have been a trend for quite some time, but for some reason I never tried them. How silly I was! They are incredible! This peanut butter cake is a delicious snack for when you do not have time to use the oven.
I made it using brown rice flour, honey and almond oil, so it's also quite healthy. You can even make it for vegans, simply by changing the egg for a flaxseed egg.
All this I put in a cup big enough for two people to share. But I tell you a secret, I did not share it with anyone. Do you dare to try it?
Ingredients:
2 tablespoons of brown rice flour.
1/2 teaspoon baking powder.
1 egg or a substitute in case of vegans
1 tablespoon of coconut oil
2 tablespoons of almond milk
1 teaspoon vanilla
2 tablespoons of honey or maple syrup
2 tablespoons peanut butter
Dark chocolate chips (as many as you want)
Instructions
Mix the brown rice flour with the baking powder in a bowl and stir until mixed.
Add the other ingredients, except the chocolate sparks. Shake until well mixed and without lumps.
Pour the mixture into a large cup (or 2 small cups) and cover with the chocolate chips.
Place the cup in the microwave at full power for about 2 or 3 minutes and let it cool slightly.
And ready!
If you have a little more time I suggest you try this exquisite quick bread of oatmeal and chocolate chips.
